Dorayaki-red bean pancake-/どら焼き

Dorayaki is a Japanese pancake stuffed with red bean paste.
It perfectly goes with green tea.
It’s known as a favorite snack of a famous anime character DRAEMON.

Japanese term “dora” means gong and “yaki” means baking.
The shape of drayaki looks like a gong, so naming it as such.

The outer part is soft and made from wheat flour, eggs and sugar.
And boiled red beans are stewed with sugar in order to make red bean paste (we call “anko”). 

Anko usually has two types, Koshi-an and Tsubu-an.
Tsubuan (see in the photo) is made of stewed whole red beans.
On the other hand, when the red bean paste is passed through a sieve, it’s called “Koshi-an”
So, Koshi-an has smoother texture than Tsubu-an. 

In autumn, sometimes chestnuts are mixed together with red bean paste.

Aside from red bean paste, you may find a drayaki stuffed with cheese, fresh cream, white bean paste and so on.

Actually, Japanese sweets are not sugary because Japanese people love enjoying the natural taste of ingredients.
